Weekend treat

Summer is around the corner and even we have been getting warmer weather. Believe it or not, there have been a few days this week we wore short sleeves. Shocking, I know.

If I had to pick a smell of summer, it would be citrusy. I love lemons and limes. Key lime pie is my friends Pauline’s and Sherry’s favorite dessert. I miss them, so eating this makes me think of them. This recipe is the best, because like all others from Real simple it is real simple. Shocking, I know.

This week I will treat you even better. No, I am not sending you pie. I will share with you my absolute favorite blog post of the week. Just like picking a photo to post everyday for my 365 project, it was hard to choose. Easy Key Lime Pie

Easy Key Lime Pie

Serves 6| Hands-On Time: 10m | Total Time: 4hr 10m

Ingredients

  • 1 14-ounce can sweetened condensed milk
  • 1 6-ounce can frozen limeade concentrate (not thawed)
  • 1 cup heavy cream
  • 1 6-ounce graham cracker piecrust
  • zest of 1 lime

Directions

  1. Place the condensed milk, limeade concentrate, and cream in the bowl of an electric mixer fitted with the whisk attachment. Beat until fluffy and soft peaks form.
  2. Pour the filling into the piecrust and smooth the top. Refrigerate until chilled and loosely set, at least 4 hours (and up to overnight).
  3. Sprinkle the pie with the zest before serving.
